Serves: 6 to 10

Ingredients
  • 16 oz. of jumbo shrimp, peeled, tail on
  • ¼ c. of olive oil
  • 1 tbsp. of lemon juice
  • 1 tbsp. of Herb de Provence spice blend
  • 1 tsp. of fresh thyme, minced
  • 2 tsp. of fresh garlic, minced (about 1 clove)
  • ½ tsp. of kosher or sea salt
  • pinch of freshly ground pepper
  • 4 ea. of lemon wedges
  • 6 to 10 ea. of bamboo skewers

Instructions

You can serve these shrimp skewers as an appetizer or an entrée. Use one shrimp per skewer as an appetizer or place 3 or more per skewer as and entrée.

Turn the TurbChef oven on by turning oven to ‘Bake’ on the cook wheel, select ‘COOKBOOK’ then under cookbook, and select ‘Marinated Shrimp Skewers’. Press ‘START’ to begin the preheat cycle.

To prepare the Marinated Shrimp Skewers in mixing bowl, mix olive oil, lemon juice, spices and garlic a marinade. Place shrimp into the marinade and let set at least 10 minutes and up to four hours. Using bamboo skewers, place 1 to 3 marinated shrimp onto each skewer by skewering right above the tail and again toward the top of the shrimp so the shrimp forms a “C”. Using a pepper grinder, grind a small mount of pepper onto each skewer and sprinkle with sea salt. Place skewers onto a sheet pan and place pan into the oven.

Press ‘START’ again and bake under Marinated Shrimp Skewers for 3 minutes. Serve with dipping sauce listed below if serving as an appetizer.

Herb de Provence dipping sauce:
2 c. of mayonnaise
¼ c. of cocktail sauce
2 tbsp. of Herb de Provence spice blend
1 tbsp. of Dijon mustard
