Dish: Green Bean Amandine

Ingredients
  • 2 lbs. of fresh green beans, stems removed
  • 2 tbsp. of water or chicken stock
  • ½ tsp. of salt (optional)
  • 2 tbsp. of butter
  • Topping
  • ½ c. of almonds, chopped

Instructions
Using fresh snapped green beans makes this dish a healthy side dish for an elegant Thanksgiving meal.

Turn Turbochef oven on and under ‘Bake on the cook wheel, select ‘COOKBOOK’ then under Cookbook, select ‘Green Bean Amandine’’. Press ‘START’ to begin the preheat cycle.

Rinse and clean green beans and remove the stems. Place green beans in a covered casserole dish and top with water and butter. Press ‘START’ again and bake about 6 minutes. Remove green beans from the oven and top with almonds.

Dish: Rack of Lamb

Ingredients
  • 1 ea. of French-cut, rack of lamb (8 bones, about 16 oz.)
  • 1 tbsp. of soy sauce
  • ¼ c. of Dijon mustard
  • 2 cloves of garlic, minced
  • ¼ c. of fresh mint leaves, chopped*

Instructions
Rack of lamb is an elegant but simple dinner for two. A good whole grain or Dijon mustard is a classic preparation. We have borrowed some tips from Anna Pump the gourmet cook of the Hampton’s for this preparation. Serve with cous cous and a fresh field green salad and your favorite vegetable for a complete meal.

Turn Turbochef oven on by turning oven to ‘Bake’ on the cook wheel, select ‘COOKBOOK’ then under cookbook, select ‘Rack of lamb ’. Press ‘START’ to begin the preheat cycle.

To prepare the Rack of lamb, using a sharp knife, remove most of the fat cap and silver skin from the rack of lamb. Leave about a 1/8” of fat on the eye of the lamb but scrape any fat off of the bones so they are clean. Mix mustard, soy sauce, garlic and mint together and brush a light coating over the lamb. Avoid getting the mustard sauce onto the bones. You may let this mixture marinate into the lamb for 30 minutes at room temperature. Place rack of lamb into a ceramic or Pyrex dish and place into the oven.

Press ‘START’ again and bake under ‘Rack of lamb’ for 4 minutes for a single rack or 5 ½ minutes for 2 racks. Remove from the oven and let rest for 4-5 minutes. Prepare the cous cous when you put the rack of lamb in the oven for a perfectly timed meal. Cut the rack between every other bone to make 2-chop portions. Garnish with fresh mint or if using rosemary, garnish with a sprig of rosemary.

* You may substitute minced rosemary for the mint for a different flavor.

Dish: Bananas Foster Rollups

Ingredients
  • 16 ea. of spring roll pastry wrappers
  • 2 ea. of bananas
  • 1 c. of brown sugar, packed
  • 1 tsp. of natural and artificial spiced rum flavor
  • ¼ c. melted butter

Instructions
These rollups have the flavor of Bananas Foster but are a new shape. This is a prefect “make ahead” dessert that cooks very quickly.

Turn the TurboChef oven on and under ‘Bake’ on the cook wheel, select ‘COOKBOOK’ then under cookbook, select ‘Bananas Foster Rollup’. Press ‘START’ to begin the preheat cycle.

To prepare the Bananas Foster Rollup, cut each banana in half crosswise, then cut each half into quarters, lengthwise to yield 8 pieces per banana, measuring approximately ½”x3” in length. In a mixing bowl, mix the rum flavoring into the brown sugar and roll each banana piece into the brown sugar to coat the outside of the banana. Place one banana piece in the center of the spring roll wrapper and fold the ends toward the center. Fold dough over and roll like a burrito. Brush melted butter onto each rollup or you can substitute buttery flavored Pam spray. At this point you can store in refrigerator until ready to serve.

To bake the rollups, place prepared rollups onto a sheet pan and brush again with melted butter or non-stick spray. Place pan into oven. Press ‘START’ again and bake under ‘Bananas Foster Rollup’ for 1½ minutes.

For presentation, Place a scoop of French vanilla ice cream in the center of a plate or dessert bowl. Place 3 to 4 banana foster rollups in a pyramid fashion over the scoop of ice cream. Drizzle with caramel rum sauce and garnish with fresh mint, if desired.
