- 1 spring of thyme
- 1/4 cup red wine vinegar
- 1/2 cup red wine
- 1/4 cup red currant jelly
- juice and zest of one lemon
- 5 oz cooked dice bacon
- 1 cup water
directions
- butter the sides and bottom of a 2 qt. casserole
- combine all ingredients and stir to incorporate
- place in buttered casserole dish
- sprinkle with salt and pepper to taste and cook uncover
