Chorizo Stuffing
- 1 lb. chorizo
- 1 cup chopped onions
- 1 1/2 cup Panko bread crumbs
- 1/4 cup chopped parsley
- 1/4 cup milk
- 1 egg
Stuffed Chicken Thighs
- 8 each boneless skinless chicken thighs pounded
- 2 cups chorizo stuffing
directions
Chorizo stuffing
- in a medium saute pan cook the chorizo and drain excess fat
- add onions and cook until translucent, take off the heat
- add bread crumbs, parsley, egg, and milk, salt and pepper to taste.
Stuffed chicken thighs
- cover a flat surface with a large piece of plastic wrap
- lay the chicken out and cover with another piece of plastic
- pound it to enlarge and flatten just slightly
- remove plastic from the top and put about 1/4 cup stuffing and roll it up
