ingredients
  • 1/2 lb, ground beef
  • 1 tbsp olive oil
  • 1/4 cup onion diced
  • 1/4 cup green chiles canned
  • 1/2 tsp. ground chipotle powder
  • 2 each pie crust
  • salt and pepper to taste
  • 1 egg wash (1 egg)
  •  1/2 cup pepper jack cheese grated
directions
  • heat the olive oil in skillet and saute the ground beef and diced onions.
  • add green chiles,pepper, salt and ground chipotle.
  • cook until beef is browned and the onions are transparent
  • strained off any excess of fat
  • place one  of the pie crust on surface and roll out to a circle about 12″ in diameter
  • cut 5 pastry rounds out of it, each measuring about 5″ in diameter
  • repeat steps with the second pie crust
  • moisten the edges of pastry  with water, place in half of the pastry round 1/4 cup of the beef, and top with 2 tbsp pepper jack cheese
  • fold over the other half of the pastry and seal the edges with a fork
  • place empanadas on to sheet pan that has been sprayed with pan release
  • brush each empanada with egg wash
