- salt & pepper
- olive oil
- 1 small leek (clean and sliced)
- 1 small diced shallot
- 2 oz. raw bacon (chop and cook until crispy)
- 1/4 pint cherry tomatoes (cut in half)
- 1 oz olive oil
directions
- Fish
- Drizzle oil into a small, cold Teflon pan
- season the fish with salt and pepper
- place the seasoned fish in the oiled pan
Bacon Leeks
- Drizzle oil into small, cold Teflon pan
- combine all the ingredients in the pan
- toss to coat with the oil
- place the pan in the oven with the fish pan
- cook in the appropriate oven
