ingredients
  • 1 – 4oz. Halibut
  • salt & pepper
  • olive oil
  • 1 small leek (clean and sliced)
  • 1 small diced shallot
  • 2 oz. raw bacon (chop and cook until crispy)
  • 1/4 pint cherry tomatoes (cut in half)
  • 1 oz olive oil
directions
  • Fish
  • Drizzle oil into a small, cold Teflon pan
  • season the fish with salt and pepper
  • place the seasoned fish in the oiled pan

Bacon Leeks

  • Drizzle oil into small, cold Teflon pan
  • combine all the ingredients in the pan
  • toss to coat with the oil
  • place the pan in the oven with the fish pan
  • cook in the appropriate oven
