ingredients
- 1 Pork Tenderloin
- 1/2 Cup Chopped Sun-dried tomatoes
- 1/2 Cup Pitted Kalamata Olives
- 1/2 Cup Crumbled Feta Cheese
- 2 Tbsp Chopped Fresh Thyme
- 2 Tbsp Olive Oil
- Salt and Pepper to Taste
directions
Mix tomatoes, olives, feta cheese, thyme and olive oil in bowl. Season with salt and pepper
Cut slit into pork lengthwise.
Place mixture into slit then tie with cotton twine.
Place pork seam side down on pan that has been sprayed with pan release
Brush with olive oil season with salt and pepper
