ingredients
8 oz. grape tomatoes
3 ea. vine tomatoes,quartered
2 ea. red peppers, seeded and quartered
1 ea. red onion, quartered
2 cloves of garlic
1 spring thyme
Chicken stock as needed, ( about 1 pint)
1 oz. chopped herbs basil, oregano, parsley
salt and pepper
directions
Combine tomatoes, red peppers, onions, garlic and thyme. Coat with oil, salt and pepper. spread out in a 1/2 sheet pan and cook. After cooking puree with stock and strain. Add herbs and check seasoning.
