ingredients
1/3 cup mixed chopped fresh herbs parsley, dill, Chives
1- 15 oz fillet about 1.25 inch thick
olive oil
salt and pepper
1 1/2 tablespoon unsalted butter
1/3 cup dry white wine
1 tablespoon fresh lemon juice
directions
- using tweezers, remove any bones from sea bass, and pat dry.
- drizzle all over with olive oil and season with salt and pepper.
- placed sea bass in a lightly oil 2″ half hotel pan and cook.
- when done cooking remove from oven.
- transfer fish to a serving platter.
- add wine to the pan to deglaze, scraping any brown bits with wooden spoon, stir in lemon juice, chopped herbs, and butter. Salt and pepper to taste. Spoon sauce over fish.
