  • 18 slices parma ham ( 3 per breast)
  • 1/2 cup goat cheese
  • 2 Tbsp. thin sliced sun dry tomatoes packed in olive oil
  • 1-1/2 tsp. chopped fresh rosemary
directions
  • in small bowl mix goat cheese, tomatoes, and rosemary
  • with a knife make slit down the side of chicken breast to make a pocket
  • stuffed approximately 1 tbsp. of goat cheese into pocket
  • sprinkle breast with salt and pepper
  • wrap with parma ham
