Bratwurst is an Oktoberfest staple and an easy way to bring a high-quality seasonal favorite to the menu.

Because TurboChef ovens are not designed for cooking raw, fatty proteins, this recipe starts on the CookTek Double Hob. The raw bratwursts are first cooked in beer and sweet onions using induction, then transferred to the TurboChef Double Batch to finish and achieve a browned, grilled appearance.

Ingredients

5 raw bratwursts
2 cans beer or non-alcoholic beer
1 sweet onion, sliced

Preparation

Marinate the bratwursts overnight with the beer and sliced sweet onion.

Place the bratwursts, beer and onions into an appropriately sized pan and bring to a boil on the CookTek Double Hob. Once boiling, reduce power to 25% and cook for 12 minutes, or until the bratwursts float.

Remove the bratwursts from the liquid and place them on a grill plate coated with food release.

Finish in the TurboChef Double Batch using the following settings:

Temperature: 500°F / 260°C
Fan: 80%
Cook Time: 3:00

When finished, remove the bratwursts from the oven and serve as desired.

Pre-Cooked Brats in the Double Batch

  1. Slice the brat down the center without cutting all the way through.
  2. Butterfly the brat and place cut side down on a grill plate sprayed with food release.
  3. Cook in the Double Batch at 500°F (260°C), 80% fan for 3:30.
  4. Remove from the oven and serve.
