Lil Red’s is a family-owned gourmet grilled cheese concept and longtime vendor at the Texas State Fair, with deep roots in the foodservice industry dating back decades and an operation that once spanned 29 booths.
Before TurboChef, Lil Red’s relied on six panini presses operated by three people. Sandwiches were cooked open-faced, with team members manually hovering presses to melt cheese before assembling and lightly pressing each sandwich. The process was slow, labor-intensive, and limited to just two sandwiches every six to seven minutes. As lines grew longer, it became clear the operation needed a better solution.
Lil Red’s replaced all six panini presses with a single HhC2020 Conveyor, and the impact was immediate. The oven now cooks eight sandwiches at a time in just 1.5 to 2 minutes, reducing cook time by over 90% per sandwich and dramatically increasing throughput. The change also reduced stress, requiring only one person to run the oven while freeing up time for prep and customer engagement.
