Red Mesa Mercado in St. Petersburg, Florida produces all of its tortillas from scratch to support four restaurant locations and a catering operation. To keep up with demand while maintaining consistency, the team uses a single TurboChef 2620 Conveyor oven to cook tortillas throughout the day. The oven provides the throughput needed to support high-volume production while remaining ventless, which is critical in a shared workspace where multiple steps of the tortilla-making process happen side by side. This setup allows Red Mesa Mercado to centralize tortilla production, maintain quality, and efficiently support multiple locations from one kitchen.
